225 gm (8 oz) flour,
3 level teaspoons baking powder,
1 pinch salt,
150 gm (5 oz) light soft brown sugar,
50 gm (2 oz) chopped walnuts,
100 gm (4 oz) grated carrots,
2 mashed ripe bananas,
2 eggs,
150 ml (1/4 pint) salad or corn oil
Heat oven to 180°C or 350°F or gas mark 4.
Flour, baking powder, salt, and sugar first, then nuts,
carrots and bananas, mix lightly,
and add eggs and oil.
Bake for about 30-40 minutes or until brown.
When using self-raising flour add 2 level teaspoons baking powder and no salt.
